Classic Tea Sandwiches

Also referred to as finger sandwiches meant to be eaten at afternoon tea to stave off hunger until the main meal.

They are cut up in small sizes making it easy to handle and eaten in 3 or less bites.

Here are some popular recipes but have fun creating some of your own sandwiches

CUCUMBER DILL

Ingredient: 8 ounces cream cheese (softened

3 tablespoons mayonnaise

2 teaspoons fresh dill (chopped)

1 teaspoons fresh chives (chopped)

1/4 teaspoon garlic powder

salt and pepper to taste

1 long English cucumber (sliced thin)

loaf of sliced bread


Directions: with a hand mixer or whisk; mix together cream cheese and mayonnaise in a small bowl until smooth. Stir in chopped dill, chives, garlic powder, salt and pepper. Spread entirely over each slice of bread, next layer cucumbers to half of the loaf. Top other half of the loaf slices with a few dashes of chopped dill. Make sandwiches and trim off the crusts then cut into two or four halves. Arrange on a fancy plate or tiered plate and serve with tea



HAM & CHEESE


Ingredients: Honey Mustard

16 slices of whole wheat or white bread

8 - 10 ounces very soft Brie, room temperature

8 thin slices of ham, about 4 ounces

Unsalted butter, softened


Directions: Spread a very thin layer of honey mustard on 8 slices of bread, Next spread a thin layer of Brie

over the mustard and top each slice with 1 piece of ham. Then place each cheese side down over a slice of ham and top with another slice of bread. Trim off crusts, cut diagonally into 4 smaller size sandwiches.


Optional - lightly butter one edge of each sandwich and dip that edge into a dish of finely chopped parsley for garnish!

Serve with tea!

Salmon Sandwich

1 package smoked salmon

½ cucumber

2 oz cream cheese

dill chopped

1 pinch salt

6 slices pumpernickel bread


Egg Sandwich

4 eggs hard boiled

2 tablespoons butter softened

1 tablespoon mayonnaise

1 pinch paprika

6 slices potato bread


Cranberry Chicken Sandwich

3 chicken breasts boneless

¼ teaspoon thyme

3 tablespoons olive oil

2 oz cranberries

1 sprig watercress

1 tablespoon mayonnaise

2 teaspoons dijon

6 slices sweet bread
